Créme Brulee

The créme brulee “burnt cream” is a specialty of French pastries, we could compare it to our Catalan cream.

The first written references about this delicious dessert appear around 1691 and until today the recipe has been preserved intact, with very few variations. We teach you how to prepare a delicious créme brulee.

Créme brulee recipe

Ingredients:

  • 1/5 liter of liquid cream or 200 ml. milk and 250 liquid cream
  • 5 egg yolks
  • 5 tablespoons of sugar
  • Vanilla extract

Preparation mode:

  • 1-Put to heat the cream with half the sugar until dissolve.
  • 2- Beat the egg yolks with the rest of the sugar.
  • 3- Remove  from the heat and add the yolk mixture to the warm liquid cream and vanilla, so that the yolks do not cook.
  • 4-Put the mixture in individual containers (clay pots for example) and put them in a saucepan with water and put them in the oven until it is done in a water bath for 1 hour more or less at 150ºC.
  • 5-Remove from the oven and sprinkle with white sugar or brown sugar. Burn it with a blowtorch.

Some ideas and tricks for your créme brulee

  • You can flavor your créme brulee in different ways: with lemon or cinnamon peel, mint, liqueur, coffee, cinnamon … Add to the heavy cream when you go to heat it. Remove it later.
  • Always put it in the oven at a low temperature, so that the heat is even and cooks little by little.
  • To see if it is ready, stick a skewer stick, for example. If it comes out clean, it’s ready.
  • To caramelize the cream, it must always be cold.
  • Do not let the sugar put black, because the flavor will be bitter.
  • Put a thin layer of sugar, the result is much better.
  • Put the vanilla just when you remove the cream from the heat, so that the aroma does not evaporate.
  • If you don’t have a torch,  gratin the sugar in the oven.
  • You can decorate it with a cinnamon tube, fresh or candied cherries, coffee beans …

Créme brulee light recipe

If you want to enjoy this dessert but with much less calories, we give you this equally rich recipe.

Ingredients:

  • 1/2 liter of thick milk (choose a milk rich in omega 3, it provides healthy fats and its consistency is thick) or milk cream with only between 12% and 30% fat.
  • 5 egg yolks
  • Stevia
  • Vanilla extract

Prepare your créme brulee in the same way as the previous recipe.

A dessert with a lot of calcium, minerals and vitamin A

Stop thinking that creme brulee is fattening and look at the amount of benefits it has for your health, enjoy this dessert from time to time.

Properties of egg yolks:

Egg yolks have great nutritional properties. It is a rich source of vitamins and minerals : vitamins A, E, D, folic acid, B12, B6. It is also one of the few foods that contains vitamin D naturally. It also contains iron, phosphorus, potassium and magnesium.

It also contains choline, a substance that helps memory during the embryonic stage. It also helps the functioning of cells.

Although the yolk contains between 4 and 4.5 grams of fat,  only 1.5 are saturated fat and the rest are unsaturated, making it a healthy food that you do not have to deprive yourself of and it does not affect cholesterol.

Thanks to its lecithin content , it  helps so that cholesterol is not completely absorbed by the body, it also helps to maintain concentration and is protective of the heart.

Although it raises cholesterol, it is not bad to take it from time to time, since it provides large amounts of vitamin A and to a lesser extent vitamin D in addition to calcium.

Secrets so that creme brulee makes you fat less

If you want to enjoy your créme brulee without making you too fat, take it as a dinner without anything else, as a dessert when you have made a light meal with a salad, a grilled fish with some vegetables, a light cream etc.

Never take it after a caloric meal, as you will be adding a lot of unnecessary calories to your body. The point is to compensate.
