Andalusian stuffed squid

Ingredients

  • 4 medium-sized squid for one serving per person
  • 2 boiled eggs
  • 1 chopped onion
  • 1 tablespoon of breadcrumbs
  • 100 ml of white wine
  • Chopped parsley
  • Chopped chives (optional)
  • 3 garlic cloves
  • Nutmeg
  • Pepper
  • Salt

preparation:

  • First, fry the shallots, parsley and garlic in a frying pan with a little oil. Meanwhile, we wash the carrots, cut them into strips and add them to the pan.
  • Now, with the peppers: open them, remove the seeds, wash, cut into strips and add to the pan.
  • We add salt and pepper, and then cover.
  • Clean the squid. Pull the head and the cartilaginous skeleton, cut the tentacles and reserve.
  • At this point, stuff the squid with a spoon. Take the carrots, shallots, garlic, parsley and the peppers that are almost ready and put them inside the squid. When you have filled them, you add them together with the tentacles in the pan, also with the remaining vegetables. If necessary, add a little hot water.
  • After about 10 minutes it will be almost ready, then pour in a tablespoon of apple cider vinegar. Then add a tablespoon of olive oil and dry them until you get a creamy sauce .

A very healthy and exquisite variant, which you can accompany with white rice to get a single dish.
