Salmon Croquettes

Salmon croquettes are an excellent and very simple recipe to make. On this occasion, we are going to show you two exquisite variants of this delicious dish, both optimal to taste at any time of the day.

The salmon is an oily fish that carries many nutritional benefits to our health, so it is an almost indispensable food in our food. Children will love this way of eating fish in a healthy way.

Recipe No. 1: salmon croquettes

Ingredients

  • 200 grams of salmon
  • 400 grams of potatoes
  • 160 grams of carrots
  • 1 sprig of parsley
  • 1 egg
  • Thyme
  • 1 teaspoon of cumin
  • 1 teaspoon coriander seeds
  • Salt
  • Pepper
  • Oil for frying

Preparation

  • First, wash the potatoes and carrots, peel them and cut them into large enough pieces.
  • Then, put them in a pot of boiling water and salt to cook them for 20 minutes (or until they are soft).
  • Then, place in a bowl and mash with a hot fork.
  • On the other hand, sauté the salmon for a moment.
  • Then, add the salmon to the bowl and add the other ingredients (except the oil), along with a little salt and pepper to taste.
  • Next, mix until the ingredients are mixed.
  • Next, shape the mixture into balls and flatten slightly.
  • Finally, heat the oil in a deep frying pan, fry the salmon croquettes and serve hot or warm.

Recipe Nº2: salmon and potato croquettes with yogurt sauce

Ingredients for 20 croquettes

  • 800 g potatoes
  • 200 g smoked salmon
  • 1 egg
  • 20 g potato starch
  • 50 g bread crumbs
  • 2 sprigs of dill
  • 1 pinch of salt
  • Pepper to taste
  • Grated nutmeg to taste

Salmon

To bread

  • 150 g of breadcrumbs
  • 2 eggs
  • 1 pinch of salt

For the sauce

  • 200 g Greek yogurt
  • 2 g curry powder
  • 1 pinch of salt

To fry

  • Vegetable oil

To decorate

  • 200 g curly salad

Preparation

  • To start, wash the potatoes under running fresh water and then put a pot with water and salt.
  • When the water has reached the boil, simmer the potatoes with the skin, in order to obtain an even cooking (try to use the same size potatoes).
  • Once cooked, allow to cool a little to peel them and then mash them in a potato masher.
  • On the other hand, chop the dill and cut the smoked salmon into strips.
  • Then, pour the chopped dill into the bowl with the mashed potatoes, with salt and pepper, and the lemon zest.
  • Also, mix with grated nutmeg, shredded salmon and a beaten egg.
  • Now it’s time to knead everything with your hands and then pour in the chopped breadcrumbs and potato starch. All the ingredients should be mixed until the dough is smooth and homogeneous.
  • Next, in a small bowl, beat the eggs separately and add the salt.
  • Then, in a low baking dish, pour the breadcrumbs that will serve to bread the salmon croquettes.
  • Then, take about 50 g of the potato and salmon mixture with your hands and shape into a ball.
  • Next, soak it in the egg and then in breadcrumbs or breadcrumbs, covering evenly. Repeat this procedure until the mixture is finished.
  • Lastly, put a large frying pan on the fire and pour in the vegetable oil. Fry the croquettes in hot oil for a maximum of 2 minutes, being careful to fry only a few at a time to avoid reducing the temperature of the oil. Remove them with a slotted spoon when they are golden brown; let them drain on kitchen paper.

    Preparation of the yogurt sauce

    • While you let the croquettes drain, you prepare the yogurt sauce.
    • In a bowl, pour the Greek yogurt, curry powder and a pinch of salt.
    • Next, mix well with a spoon until all the ingredients are integrated.
    • At this point, you can serve and enjoy your salmon and potato croquettes with yogurt sauce, and serve them on a bed of salad.

    Both recipes allow you to keep the salmon croquettes in the freezer, in case you want to make more of them and use them for other days.
