Baked Delicacies: 5 Baked Potato Recipes

Potatoes are one of the foods that are most consumed in a regular diet. It admits diverse preparations and its nutritional contribution favors the organism considerably. So if you’re a roast potato lover and want to vary your repertoire of recipes a bit, this is your chance to look and try other options.

Baked delicacies: 5 baked potato recipes

1. Potatoes with peas and cheddar cheese

Ingredients

  • Potatoes (200 g).
  • ½ can of peas (63 g).
  • Cheddar cheese (300 g).
  • Vegetable oil (preferably olive).
  • Seasonings: salt, parsley.
  • Optional: 1 small onion (30 g).

Preparation

  1. We peel and wash the potatoes. Next, we cut them into sticks.
  2. Bake the potato sticks at 180 ºC for about 25 or 30 minutes.
  3. We heat a frying pan over medium heat, barely greased with a little olive oil.
  4. Besides, we cut the onion into small pieces (as much as we can). Once we have it ready, we place it in the pan for a few minutes until golden brown. We must constantly stir so that it does not burn. When it is ready, we turn off the fire and reserve.
  5. We open the can of peas and extract only half. We drain the liquid and set aside in a container.
  6. Chop the cheddar cheese into small pieces and microwave them (on low intensity) for 15 seconds. We can also grate the cheese, as is more comfortable for us. If the 15 seconds were not enough, put the cheese back in for another 10 seconds (try not to exceed the time, so that you do not completely extract the moisture from the cheese).
  7. We remove the potatoes from the oven and immediately pour the cheddar cheese, peas and onion pieces on top. Then sprinkle a pinch of parsley on top and that’s it!

2. Roasted potatoes with rosemary and orange

Ingredients

  • Potatoes (200 g).
  • Rosemary.
  • Olive oil (to taste)
  • White wine (40 ml).
  • Natural orange juice (100 ml).
  • Seasonings: Salt and black pepper.
  • Optional: 1 pinch of garlic powder.

Preparation

  1. We preheat the oven to 180 ºC.
  2. We wash and peel the potatoes. Next we cut in the way that we like the most. Then we drizzle a drizzle of olive oil over them.
  3. We extract the orange juice (without removing its pulp) and mix it with the rosemary and white wine.
  4. We take the potatoes to the oven at a temperature of 200 ºC for 20 or 30 minutes. Once the first ten minutes have elapsed, we open the oven and, without removing the potatoes completely from the oven, we sprinkle the mixture of orange, wine and rosemary on top. We put the tray back in the oven and let it finish cooking.
  5. If we decide to add a touch of garlic powder, we will do it at the end of all the preparation, just before serving.

3. Roasted potatoes with tomatoes and mushrooms

Ingredients

  • Potatoes (200 g).
  • Olive oil.
  • Garlic.
  • Cherry tomatoes (60 g).
  • Mushrooms (50 g).
  • Seasonings: coarse salt, black pepper.

Preparation

  1. We preheat the oven to 200 ºC.
  2. We wash the cherry tomatoes. We booked.
  3. We wash and cut the potatoes (unpeeled) and the mushrooms in half.
  4. Pour two tablespoons of olive oil into a bowl and the two cloves of garlic (previously crushed). Place the potatoes on top (with the skin side up) and season with salt and pepper. Once we have them ready we take them to the oven.
  5. After the first 15 minutes of cooking the potatoes have elapsed, we add the mushrooms.
  6. We let everything cook for a while longer and when the last 5 minutes arrive, we add the tomatoes.

4. Roasted potatoes with cream and bacon

Ingredients

  • Potatoes (200 g).
  • Cream (150 g).
  • Virgin olive oil.
  • Grated cheese (50 g)
  • Smoked bacon (125 g).
  • Seasonings: salt, black pepper.

Preparation

  1. We preheat the oven to 180 ºC.
  2. We wash, peel the potatoes and cut them into medium-thick slices.
  3. Besides, we cut the bacon into small pieces.
  4. Grease a bowl with a little olive oil and place the potato slices on top. Next, we salt and pepper.
  5. Pour the cream, grated cheese and bacon over the potatoes evenly. We make sure that the bacon is well spread. 
  6. Cover the source with a piece of aluminum foil and bake for 30 or 35 minutes.
  7. Once this time has elapsed, we prick the potatoes with a toothpick to check if they are well cooked or if they still have a little more time in the oven.
  8. Upon reaching the last 5 minutes of cooking, remove the aluminum foil and let the potatoes finish au gratin.
  9. Before serving, we must let the source rest at room temperature for a couple of minutes.

5. Roasted potatoes with vegetables

Ingredients

  • Olive oil.
  • Potatoes (200 g).
  • Garlic.
  • Medium onion.
  • 3 medium carrots.
  • Red pepper.
  • Medium zucchini.
  • Seasonings: coarse salt, oregano, thyme, black pepper.

Preparation

  1. We wash, peel and cut the zucchini into slices (about 1 centimeter). We do the same with potatoes and carrots.
  2. Apart, we cut the onion into small pieces and the pepper in julienne.
  3. We peel the garlic and crush it well to be able to spread it easily later.
  4. We preheat the oven to 200 ºC.
  5. Grease a bowl with a little olive oil and place the potatoes and vegetables on top. Season with salt and pepper and put in the oven for about 35 or 40 minutes.

Note: If we wish, the oil could be replaced by butter.

As you may have seen, all these recipes have a cooking time of less than one hour, so they are an excellent option when we do not have much time to prepare food.
