Its creamy texture and slightly sweet taste is what makes it the favorite of people who have chosen to reduce or eliminate their consumption of animal milk. Here we detail its properties.

Almond milk is obtained from crushing almonds in water. The truth is that it is called milk, but in reality this is only because of the color.

Its composition, due to the fact of being vegetable, makes it very different from cow’s milk. It is very popular among people who follow a vegetarian and vegan diet, and also athletes.

Nutritional values

Due to the variety and types of preparation of this exquisite drink, it is difficult to give an exact information on its energy content and nutritional composition. However, we can share this data:

  • About 100 grams of almond milk provide between 25 and 50 calories.
  • This caloric content is actually more due to its sugar content, since its protein content barely reaches less than 1%.
  • Because it is a dried fruit, it has a significant fat content , but don’t worry, these fats are monounsaturated, which are known as good fats. Remember that these are lipids with a high nutritional level.

How to prepare homemade almond milk?

To obtain a quality homemade almond milk it is necessary that the almonds are very well pulverized.  To do this, you must rely on a good blender.

  • Separate the almonds in batches, grind, repeat and then add the next batch of almonds; and so on until only a fine powder remains.

Once you have the processed almonds, you will need a strainer and cheesecloth. Then you are ready to start making your own almond milk.

Ingredients

  • 1 pinch of salt
  • 3 cups of water (750 ml)
  • 1 ½ cup of almonds (150 g)
  • ½ teaspoon of vanilla extract (2.5 ml)
  • 1 ½ teaspoon of honey or agave syrup (7.5 ml)
  • Optional: cinnamon or cocoa (unsweetened) powder

Preparation

  • Place the almonds in a bowl and cover them. Let them sit in the water overnight. The almonds can soak for a couple of hours, but for creamier almond milk, about eight hours is best.
  • Strain the almonds and wash them in very cold water.
  • Add the almonds with the three cups of water in a blender.
  • Blend for at least 1 minute or until you see that the mixture is creamy and appears opaque. Some pieces of almond may be found, but these will be removed.
  • Place the cheesecloth over the strainer and place in a medium bowl.
  • Pour the mixture over the strainer. When the strainer starts to fill up, hold and lift the cheesecloth and shake it so all the liquid comes out.
  • Little by little, drain the cheesecloth until only solid residues remain inside it. Be careful to do this slowly, having some patience. If you drain the cheesecloth, you can filter out some of the almond or you can break it up.
  • When all the almond has been drained into the cheesecloth you can put it aside.
  • This recipe should make at least 3 cups of creamy almond milk. Add a pinch of salt, vanilla and sweetener of your choice. If you chose, you can even add cinnamon or raw cocoa powder to it.

Conservation and consumption

Almond milk will keep in the refrigerator for up to three days.  On the other hand, do not discard the almond pulp, since it can be useful to replace flours in other pastry recipes.

  • In this case, spread it in a cake pan and bake it at 90 degrees for two hours to remove the moisture.
