Empanadas with fish

  • 1 medium onion
  • 1 tablespoon of salt (15 g)

  • 1 large can of tuna, unsalted (500 g)

  • 2 cups of precooked cornmeal (240 g)

Preparation

  1. We open and drain the tuna. Then we impregnate it with a splash of vinegar and a pinch of salt.
  2. Peel and chop the onion into small cubes. Next, sauté the onion until golden brown.
  3. We add the fried onion to the tuna along with the herbs and black pepper.
  4. Besides, we peel and chop the garlic and tomatoes. Next, we blend them.
  5. In a skillet lightly greased with a little olive oil, pour the tomato juice together with the tuna. We stir everything constantly so that the flavors are integrated while the liquid dries up a bit. This process can take approximately 5-10 minutes. Once ready, we let it cool down to room temperature. We booked.
  6. In addition, we mix the flour with the salt, sugar and a little water to form the empanada dough. We knead with wet hands, to avoid that we have remnants of dough between our fingers.

  • 4 pieces of desalted cod (about 400 g)
  • 1 cup of fish broth (250 ml)
  • Olive oil (the necessary amount)
  • 2 tablespoons of chorizo ​​peppers (30 g)

Preparation

  1. We clean, peel and cut the potatoes into slices.
  2. Apart, peel and chop the garlic into medium pieces. Next, we chop the onion into small cubes.
  3. In a frying pan over medium heat, with plenty of olive oil, sauté the garlic well. Once they are golden brown, we introduce the potatoes and sauté them as well.
  4. We stir the ingredients and, little by little, we add the fish stock. We check if it is at the appropriate salt point.
  5. Cook over low heat for 15 minutes.
  6. Once the indicated time has elapsed, add the pieces of fish and the two tablespoons of chorizo ​​peppers. We let them cook well on each side and serve.

French fries with fish, an English recipe

Ingredients (for 4 people)

  • Olive oil
  • a pinch of salt
  • ½ kilo of potatoes
  • 2 medium eggs
  • 700 grams of hake fillets
  • 1 cup of lager (250 ml)
  • 2 cups of wheat flour (240 g)

Preparation

  1. We clean the hake fillets (to make sure there are no bones or traces of skin).
  2. Cut the hake fillets into medium pieces and drain well.
  3. Apart, we put the flour and beer in a bowl. We stir a little so that the liquid moistens the flour well.
  4. We break the eggs and separate the yolks from the whites.
  5. We beat the whites until stiff.
  6. We add the yolks to the dough with beer and mix. Once we have a homogeneous dough, add the whites until stiff and stir slowly until everything is mixed.
  7. Meanwhile, we proceed to clean, peel and cut the potatoes to put them to fry.
  8. Preheat a frying pan over medium heat and grease with plenty of oil.
  9. We coat each piece of fish in the batter and then fry them until golden brown on both sides.
